Classic Coffee Streusel

By the time you get to your 50th Wedding Anniversary you may want to have a more sedate celebration. Sit down with your friends and relatives to enjoy some good coffee and this Classic Coffee Streusal this year. It's a delicious cake that's best served warm.

Wet Mix - 1/4 cup butter,
1/2 cup brown sugar,
2 eggs,
1.1/2 cups pl.yoghurt

Dry Mix - 3 cups self-raising flour,
1/2 tsp cinnamon,
1/2 cup walnuts
1/2 cup sultanas (optional)

Topping - 1 Tbsp brown sugar,
1 Tbsp margarine,
1 tsp cinnamon,
2 Tbsp walnuts

Preheat oven to 400oF, prepare pans. Blend the butter & sugar & beat in the eggs & yoghurt. Fold the previously combined dry mix into the wet mix & place into pans. Blend the topping ingredients together & place this on the top of the muffins, pressing it slightly into the batter to help it stick. Bake for 20 mins. Makes 15. These muffins are lovely served with honey.
