Red Chili Tamale Recipe

One of the most popular dishes in Arizona is tamales. Serving red chili tamales are very appropriate for your next Arizona Cardinals party.

To make red chili tamales you will need the following ingredients.
36 dried cornhusks (about 8 inches long and 6 inches wide at the top)
Shredded beef or pork
3 ounces dried New Mexico peppers
4 cloves garlic
1-1/2 teaspoons salt
1 teaspoon dried oregano, crushed
1/2 to 1 teaspoon cayenne pepper
1/4 cup all-purpose flour
3 tablespoons cooking oil
1 cup shortening
1/4 cup lard
4 cups masa harina tortilla flour
36 medium pitted green or ripe olives, halved
Soak the cornhusks in warm water overnight. Refrigerate the shredded beef or pork, but reserve the juices. Wear plastic gloves to remove the stems and seeds from the peppers. Place in a pot of water and bring to a boil. Reduce heat to medium and cook until the peppers are soft and tender. Strain the juice into a large bowl and reserve. Place the peppers, ½ juice from beef or pork juice, ½ cup of pepper juice, garlic, oregano, and cayenne pepper. Process the ingredients until smooth. Combine flour and butter into a saucepan and cook until golden brown, add the pepper puree, bring to a boil and reduce heat to medium. Cook for 5 minutes until the sauce begins to thicken and add the shredded beef or pork. Let cool. In a medium bowl mix the shortening and lard together. Add the masa harina, make sure to alternate between the masa harina and 2 cups of the meat broth. The dough will be the consistency of mashed potatoes. Spread 2 Tablespoons of dough on a cornhusk, then place 1 Tablespoon of meat mixture, and then 2 olives in the center. Roll the cornhusk down to overlap the dough. Tie the ends together and steam for 45 to 60 minutes. This Arizona favorite is sure to be a hit at your Arizona Cardinals party.
