A beach party is a fantastic excuse to get cooking up some delicious and exciting cupcakes. After all, the sun is shining, the music is playing, the sea is warm, the sand is soft and everyone is happy, so why not add to that happiness with some wonderfully baked cupcakes, full of the flavor of summer?
When baking cupcakes for a beach party, the most important thing to think about first is the theme – after all, you don't want to send a batch of cupcakes to a beach party with baby faces for decoration! Think sun, sand, sea, smiles, music, barbecues and sunglasses! This is a time to enjoy, let the hair down, relax and chill out with friends, so your cupcakes should mirror that by being cool as well as tantalising.
For your beach party cupcakes, think of summer flavors; orange, lemon, tangerine, lime, anything zesty and citrus is a great summer flavor. Yellow cupcakes with the flavor of lemon will go down a treat with everyone. Or, you could be fun and adventurous; you could make the yellow cupcakes taste like orange, and the orange cupcakes taste like lemon! It's fun, imaginative, and will definitely get people talking.
This recipe for orange and raspberry cupcakes would be perfect for a beach party. The flavors are summery and they look bright and happy – just like the people! This recipe is for 16 cupcakes, but if you want to make more, just add to the amount of ingredients needed.
For the cupcakes: 11.8oz of flour, 1 teaspoon of baking powder, 3 eggs, 1 teaspoon of vanilla, 10.5oz of caster sugar, 1 fresh grated orange rind, 1 tub of raspberries [about 40]
For the icing: 8.8oz of baking margarine, 1.5 cups of icing sugar, 0.7 fl oz of double cream , 2 teaspoons of vanilla, plus whatever food colorings you want.
Preheat oven to 350F.
In a separate bowl whisk the eggs, vanilla and sugar until light and fluffy. Add the orange and mix again.
Sift in the flour and baking powder and fold. Then add the raspberries and fold again.
Spoon mixture into muffin cases and bake for 20-25 minutes until golden. Transfer to cooling rack.
For the icing: Whisk the margarine and icing sugar together, then add the vanilla paste and the cream and whisk for a further 5 minutes. Add food colouring. Pipe onto cakes using a piping bag and star nozzle and decorate with edible glitter.
With these cupcakes, along with all the party supplies required, a beach party will be the place to be, regardless of who you are!
