Beer cupcakes may seem like a weird idea but, it can be done. This is a great idea for those that are celebrating their 21st birthday. Not only is the top of the cupcake decorated to look like a beer can, the cake will also be made out of beer. Here is a great recipe for a great beer cupcake.
To begin making these beer cupcakes follow the recipe below.
1 C Stout (Guinness is a great choice)
1 C unsalted butter
¾ C cocoa powder
2 c flour
2 c sugar
1 ½ tsp. baking soda
¾ tsp. salt
2 large eggs
2/3 C sour cream
Bailey’s Frosting
3-4 C powdered sugar
1 stick butter room temp
3-4 TBSP Bailey’s Irish Cream
Line cupcake pan with cupcake liners, a local party store will most likely have beer cupcake liners. And preheat oven to 350.
Now the next step in creating the beer cupcakes would be to take the 1 cup stout and 1 cup butter and bring to a simmer in a saucepan that has been placed over medium heat. Add cocoa and stir till smooth. Allow the beer cupcake mix to cool slightly.
Next, whisk the flour, sugar, baking soda, and ¾ tsp. salt in large bowl to blend. Using an electric mixer you will blend the sour cream and eggs till well blended. Slowly add stout-chocolate mix stirring till combined. Add flour mix and beat on slow speed. Using a rubber spatula fold the batter until it is well mixed.
Divide the beer cupcake batter among the cupcake liners filling them about ¾ full. Bake until toothpick inside cupcake comes out clear most generally this will be about 17 minutes. Remove and place on a cooling rack to cool. Meanwhile make the beer cupcake frosting.
To create the frosting of the beer cupcakes take butter and mix with an electric mixer or with a hand mixer. Try and get the butter to become light and fluffy. Next, slowly add the powdered sugar slowly one cup at a time. Once the frosting appears too thick enough to spread drizzle in the Baileys cream and whip till well combined.
The final step to creating these great cupcakes is simple frost and enjoy. For a special added touch you can place candy letters on the top of the cupcake to represent the different types of beer.
