Pulled Pork Recipe

Use the following recipe to ensure a very flavorful pulled pork sandwich.
3 cups of hickory wood chips
1/3 cup of Davis dry rub (see recipe)
5 pound pork shoulder
Vinegar barbeque sauce
12-18 hamburger buns
Davis Dry Rub Recipe:
In a small bowl combine: ½ cup Paprika, 1/3 cup pepper, ¼ cup salt, ¼ cup chili powder, ¼ cup ground cumin, ¼ cup brown sugar, 3 tablespoons sugar, 2 tablespoons cayenne pepper. Mix until well combined. Leftover rub can be stored in an airtight container for up to 6 months.
Making the pulled pork:
Soak the wood chips in just enough water to cover them for an hour. Drain the chips and add them to the grill according to package instructions. Place a pan of water on the grill. Sprinkle the dry rub over the roast and use your hands to rub the mixture into the shoulder. Place the shoulder on the rack above the water. Grill the shoulder for 4-5 hours, or until very tender. Add more water to the pan as needed to keep the moister. Remove the roast and cover with foil. Let sit for 15 minutes. Use 2 forks to pull the meat into small strands. Mix in 1 ½ cups of vinegar barbeque sauce to the pork. You can add more to ensure that the pork in fully covered. Serve on hamburger buns.
