Making cupcakes isnt difficult. But this doesnt mean it can be done with eyes closed. You do need to dedicate a bit of attention and time to make a good batch for your party.
The Chocolate and Peanut Butter cupcakes recipe blends in nicely with the Chicago Bears cupcake theme. The ingredients you will need are:
2 1/4 cups all-purpose flour
1 1/2 cups sugar
1/2 cup creamy peanut butter
3 1/2 teaspoon baking powder
1 teaspoon salt
1/8 teaspoon baking soda
3 tablespoons baking cocoa
1 1/4 cups 2% milk
1 teaspoon vanilla
3 large eggs
Place all ingredients in a large bowl and use an electric beater to beat at low speed for about 5mins. Use a spatula to scrape the sides of the bowl while mixing. When the batter is uniform, beat at high speed for a few minutes.
The batter in this recipe should be enough for about 30 cupcakes.
Pour the batter in paper cups till they are half full and place them in a pre-heated oven at 350F. The baking time required is approximately 20mins.
Allow the cupcakes to cool before you begin frosting and decorating. For Chicago Bears cupcakes, use blue color icing for about 70% of the cupcakes. For the rest 30% use a brown or orange colored icing.
Arrange the orange/brown cupcakes in a large C shape on the table and place blue cupcakes to fill up the remaining space. The finished decoration will be a blue rectangle with the Chicago Bears C logo in the middle.
