Authentic Thai Appetizer

Chinese New Year is celebrated in places all around Asia, so it makes sense to enjoy a few appetizers at your party from other Asian countries. This Thai appetizer is not only unique it's also authentic for your party. Try it and see if you like it for your next Chinese New Year party.

1 t. oil
1 lb. ground pork
4-8 cloves garlic, finely chopped
3 green onions, white part, chopped
1/3 c. sugar
1/2 tsp. pepper
3/4 c. roasted salted peanuts
1 fresh pineapple, or lettuce leaves
5 tangerine or mint or coriander leaves
4 oranges
Chopped chilis

Grind peanuts. Heat oil in a frying pan, add pork, garlic and onions. Cook until pink color disappears. drain off most of the fat. Add sugar and pepper, cook 1-2 minutes. Add peanuts, mix in well, then remove from heat. Cool to room temperature.

Prepare platter, lining with lettuce leaves. Peel and segment the citrus fruit if used, cutting each segment down to the back and fanning open to form a circle. If using pineapple, cut off top leaves and outer skin, as thinly as possible, from top down. Look at the "eye" pattern, as it forms a spiral down the pineapple. Cut the spirals with a sharp knife held at about a 45 degree angle. Cut off bottom. cut pineapple into about 5 or 6 wedges and then cut each of those into 1/4 inch slices. Arrange fruit on platter.

Mound meat mixture onto fruit, and decorate with other garnishes. Serve at room temperature, or chilled.

I love the sweet pineapple flavor that comes with this dish. It's an excellent main course when served with rice too!

When planning a Chinese New Year Party, think Red. Red invites will certainly get the attention of your potential guests and you could also put some Chinese characters on these. Decorating for this party will be fun and easy. Buy lots of red ribbon and wrap it around the branches of indoor plants and have pretty blossoms everywhere. Platters of oranges or tangerines are traditional as well as 8 varieties of dried sweet fruit. On the walls will be cool messages like "May the Star of Happiness, the Star of Wealth and the Star of Longevity shine on you!" Flowers are a very important part of the Chinese tradition as they represent regrowth, life and bearing of fruit. The party won't be successful without Chinese New Year music. Play Mah-Jong game without gambling. Hire an Acupuncturist to give treatments during then party. Chinese foods will include: dumplings, noodles, lettuce wraps, whole fish, fried rice, chow mien, eggs rolls and of course, fortune cookies to name a few. No Chinese New Year Party would be complete without the Chinese New Year Cake.
