Artichoke Dip for Columbus Day

Don't let it be said that there are no delicious dishes for Columbus Day. Next time you feel like celebrating this Portugese Sailor's day make up a quick Artichoke Dip to gnosh on. It's filling and artichokes are a popular veggie from the area.

1 cup mayonnaise or sour cream
1 cup parmesan cheese grated
2 cans water packed artichoke hearts
sprinkle garlic powder
sprinkle paprika

Cut artichoke hearts into small pieces. Mix all ingredients together except paprika. Put into baking dish and sprinkle paprika on top for color. Bake at 350 degrees f for 20 minutes or until bubbly.

A Columbus Day Party is a great idea for a Celebration. Your invitations could have pictures of Christopher Columbus on them or even one of his ships. Decorate with pictures From that grand event: the ships, Christopher Columbus himself, and Queen Isabella. This could be a costume party and you could have Your guests come in the attire of that period. The ladies could come dressed as Queen Isabella of Spain or one of her ladies in waiting and the men could come as Christopher Columbus. Have a costume contest as well with prizes for best, worst and most original. Another fun Activity might be to have the kid’s stage a skit based on the voyage itself. Everyone will enjoy this game: have guests make as many words as possible out of "Christopher Columbus" in one minute. Prepare a dinner based on standard seamen's fare of the 15th century, such as salted fish, beef, pork, olive oil, molasses, cheese, honey, raisins, rice, garlic, almonds and dried legumes. If the kids don't like this old fashioned food, you could always make them peanut butter and jelly sandwiches with cookies and cup cakes for dessert.
