Heavy Duty Bacon Muffins
Those little construction workers that will be the guests of your Construction party need a filling meal. Keep up their strength while on the job with these Bacon Muffins. They're also great for a breakfast on the go!Heavy Duty Bacon Muffins
2 strips cooked bacon,
1.1/4 cups self raising flour
1/2 cup bran flakes,
1 large egg beaten,
1/8 cup melted butter
1/2 cup tasty cheese,
1/2 tsp salt,
1/4 tsp each mustard & pepper
1/2 cup milk, approx
Cut bacon into a bowl & add the bran, cheese, salt, mustard & pepper. Stir well & make a hole in the centre to add the egg & cooled butter. Gently add enough milk to produce a soft scone texture then spoon mixture into ungreased muffin pans & scatter bacon pieces on top. Microwave on high for 3.1/2 - 4 mins, allow to stand about 1/2 a minute before removing to rack. I make these all the time for a few days' worth of breakfast on the go. They've got everything, even fiber…if you need that sort of thing.

A construction party is a great theme for a boy's party. Start out by having the invitations in the shape of a tool, say a hammer and tell you guest to come in their construction clothes and be prepared to work. On the walkway to the house put party signs out of black and yellow that read "construction zone ahead," caution "Little men working” For the cake, pile chunks of brownies on a large dish so it that looks like dirt and next to it, put a large plastic Tonka truck so that the boys can hoist their cake to their plates with the large shovel. Some fake painting could provide an interesting activity. And other games might include scrambled words that are tools with special prizes for the winner. All and all a fun party.
