• 2 large eggs
First add the flour, sugar, baking powder and salt in a large mixing bowl. Add the vanilla, milk and shortening to this and mix using an electric beater at low speed. Have a spatula with you which you can use to scrape the sides of the bowl as you work.
Add the eggs to the mixture and beat at medium speed. Keep scraping and beating till the batter is well mixed.
Use paper cupcake liners. Fill these half full with the batter and bake for about 20 minutes at 350 degrees.
