All Too Cheesy Baked Potato Slices
Potatoes are so adaptable to any menu idea. Try these All Too Cheesy Baked Potato Slices with your Disco party for some groovin' flavor. They'll be a smash hit and top the charts for sure.
4 medium even potatoes
1 tsp salt
2 to 3 Tbsp melted butter
2 to 3 Tbsp. chopped fresh herbs (parsley, chives, thyme, sage) or 2 to 3 tsp. dried herbs or 1.5 tsp caraway seeds or cumin
4 Tbsp grated Cheddar cheese
1.5 Tbsp Parmesan cheese
Preparation:
1) Peel potatoes if the skin is tough, otherwise just scrub and rinse
2) Cut potatoes into thin slices but not all the way through. Use a
handle of a spoon to prevent the knife from cutting all the way.
3) Put potatoes in a baking dish. Fan them slightly.
4) Sprinkle with sale and drizzle with butter. Sprinkle with herbs.
5) Bake potatoes at 425 degrees for about 50 minutes
6) Remove from oven. Sprinkle with cheeses.
7) Bake potatoes for another 10 to 15 minutes until lightly browned,
cheeses are melted and potatoes are soft inside. Check with a
fork.

Want to throw a Disco Party to remember? Make a guest list and then create invitations that reflect your theme. You could put graphics like peace signs, disco dancers, smiley faces, disco balls etc. on the invites. Tell your guests to come in their favorite 70's garb. The men in their leisure suits, disco shirts, flares or bellbottom disco pants and the ladies, well you know how to dress. Crucial to the decorations is the Disco Ball with a small spotlight on it. Also have lava lamps, black lights and a fog machine Place plenty of candles, incense and beaded curtains around the room. Don't forget the music: Donna Summer, Kool and the Gang, Village People, KC and the Sunshine Band, the Commodores, and the list goes on forever. No Disco Party would be complete without the booze flowing freely. Alcohol infused Punch bowl drinks were popular in the 70's. And also sloe gin fizz. Southern Comfort, Singapore Sling, Rob Roy, Daiquiri, Tom Collins, Zombie, Mai Tai, to name a few. The 70's fave food in Fondue, cheese with bread or meat to dip and devour. Chips with onion dip for snacks and then there's cold cuts, bread and condiments and veggie trays. Pizza would be perfect too. Finish off with interesting dessert and pastries.
