There is no better time to make some incredibly awesome cupcakes than at Easter time. Easter is a time of giving, sharing and enjoying what you have, so taking some time out of your day to bake some cupcakes that everyone can enjoy will really bring the feel of Easter into your home. If you're holding an Easter party, think about what you can do with your Easter cupcakes while you're getting your party supplies ready. But if you're just baking for you and your family and friends, it's equally as important to consider what your cupcakes are going to be like too.
Think of things that are typical of Easter that you could incorporate with your cupcakes; chicks, eggs, bonnets, flowers, chocolate, sweets – all of these have a very Easter feel about them, and because they're so generic an unspecific, there's plenty of ways you can use them to your advantage for Easter cupcakes. The below recipe for vanilla Easter cupcakes is really simple and easy to make. It makes about 11 cupcakes in total.
For the cupcakes you will need: 4.9oz of caster sugar, 1.4oz of unsalted butter at room temperature, 1 teaspoon of vanilla extract, 1 egg, 4.2oz of self-raising flour, 4oz of whole milk, 1 ½ teaspoons of baking powder and a pinch of salt.
For the frosting you will need: 5.6oz of icing sugar, 1.7oz of butter at room temperature, 0.5oz of whole milk, 2 teaspoons of vanilla extract, 11 mini chocolate eggs and a few sprinkles.
To make the cupcakes: Preheat the oven to 340F
Put the sugar, butter and vanilla extract into a bowl and beat until fluffy. Add the egg and beat again until fluffy, then add the milk.
In another bowl, mix the flour, salt and baking powder, and gradually add the mix to the egg butter mix while beating until the mixture is smooth. Don’t over-mix.
Spoon the mixture into paper cases in a cupcake tray until two-thirds full. Bake for 20-25 minutes. Leave cupcakes to cool.
To make the frosting: Beat the icing sugar and butter together at slow speed, add the milk and vanilla extract until it is light and fluffy (about 5 min). Spread over the cooled cupcakes and decorate with eggs and sprinkles.
