Sweet Chestnut Souffle
Chestnuts aren't just for Christmas. Although this recipe would be good for that holiday too. Add some traditional flavor to your Easter celebrations with this Sweet Chestnut Souffle.
4 egg yolks
1 cup unsweetened chestnut puree
1/3 cup sugar
3 tablespoon milk
1 tablespoon brandy
4 egg whites
unsweetened whipped cream
In a small mixer bowl beat egg yolks till thick and lemon colored, about 5 minutes; set aside. In a small mixer bowl beat the puree, sugar, milk, and brandy till smooth. Beat in egg yolks till well combined. Wash beaters thoroughly. In a large mixer bowl beat egg whites till stiff peaks form. Fold the beaten whites into the chestnut mixture. Turn into an ungreased 1 1/2 quart souffle dish. Bake in a 350F oven for 35 to 40 minutes. Serve immediately. Top with unsweetened whipped cream. Makes 4 servings.
As long as you don't make a lot of noise this souffle won't fall! Just kidding, it's great.

An Easter Party is fun for everyone. It might be a great idea to make this a garden party with the kids involved. Send out your Easter bunny invites and tell your guests it will be a garden Easter party. Set up a table or two in your back yard or at a local park where you can enjoy the sunshine and the spring breeze. Decorate the yard and house with lots of Easter decorations. What would this party be without an Easter Egg Hunt? Provide baskets for each of the guests so that they have a container to collect their treasures. Another great fun activity would be to dye and decorate eggs. All those hungry hunters are going to need something besides candy to snack on. Simple refreshments like sandwiches and fruits are the perfect sunny afternoon meal. You could make peanut butter and jelly, ham and chasse or egg salad and cut them in the shape of bunnies, chicks and eggs. For dessert make a cake in the shape of a bunny, or a lamb and cover it with coconut. A carrot cake is perfect for this occasion or small cup cakes with candy Easter eggs on them.
