Red and Tangy Cherry Bars
Some kids just love fire engines and everything to do with firefighting. If your little one or big adult kid is a Fire Engine fan be sure to make up these Red and Tangy Cherry Bars at that themed party. The red color certainly fits your theme!
CRUST: 1 1/2 c. flour
1/2 c. cold butter
5 Tb. powdered sugar
Mix together well, either in a food processor or by cutting
in by hand. Don't get the crust mixture too warm or it will
be sticky and hard to handle. Pat into a 9 x 13-inch pan.
Bake for 15 minutes at 350 F.
FILLING: 3 eggs 3 cups sour cherries
1 c. sugar
1 c. brown sugar
1 t. baking powder
1/2 c. flour
If using a food processor pour into work bowl and process
until well mixed. Then add 3 cups pitted sour cherries and
chop up by bursts of the on/off switch. Don't chop too
finely or the fruit will lose its identity. If using a mixer
or by hand, mix the ingredients except fruit. Chop the fruit
and add to mixture.
Pour over the partially baked crust and bake for another 45
minutes.
Your face will pucker a little bit when you eat these cherry bars, but once you get past that they are a real treat.

What little boy has not dreamed of being a Fireman and riding in the Fire Engine? A Fire Engine themed party is a great idea. You could have your local fire station agree to have the kids come by and climb on the Fire Engine. They will be thrilled. It will be the climax to the most fun party they have ever attended. Send out your invites on a Fire Engine Cards. If the Fire Station can't have you there, maybe they will come to you. You could have toy fire engines around the yard for your decorations and then have a treasure hunt for the "Fire." This could be made by cutting streamers of Orange, Red and Yellow cellophane and putting a fan behind it. The centerpieces for the tables will be toy fire engines with food in them like little sandwiches, pizza, chicken McNuggets. And to top things off a Fire Engine Cake.
