Phyllo Triangles with Lamb Filling
The Holy Communion should be an event shared with your entire family and closest of friends. If you plan on having a little get together after the actual communion, make sure you serve up these Easy Phyllo Triangles. The lamb filling is just a little bit different and makes these puff pastries a delight.
8 oz lean boneless lamb
3 tbsp butter
1/2 cup finely chopped onion
1 clove garlic, minced
1-2 tsp curry powder
1/4 tsp ground coriander
a pinch of cayenne pepper
Salt and pepper if you want
Chop lamb into 1/4 inch pieces. Melt 2 tbsp butter
in a pan and brown lamb over medium-high heat. Move
lamb to a bowl, and saut'e the onion, garlic, curry,
and coriander until soft. Stir in lamb and season to
taste with salt, pepper, and cayenne. Fills up about
24-30 triangles. 2 boxes (2 pounds) Filo pastry leaves
1 to 1+1/2 pounds unsalted butter, melted and slightly cooled
3 batches of FILLING
Melt the butter. Take a filo leaf, lay it out flat,
and brush it with melted butter. Put another leaf on
top of this one and butter it as well. Cut this into
four long strips (the dough is usually 18x24, so when
you cut it, you should get four 4.5x24 strips). Put a spoonful of filling at the top of each strip. Flag-fold the strip into a triangle with the filling inside. Repeat until you run out of either the filling or the filo leaves.
Slash the tops of the triangles.
Bake these at 450 degrees F. for about twenty to twenty-five minutes. I like these a lot, but sometimes I just substitute pork for the lamb in the filling. It's easier to find.

To celebrate the Holy Communion a party will be in order. The invitations will say something like: "Mr. and Mrs. Smith invite you to attend the Holy Communion of their daughter................... with party to follow at our home at .......... RSVP. Ask the guest of honor what his or her taste would be as far as a theme and then decorate accordingly. For fun activities as everyone will be dressed up, girls in their white dresses and boys in their suits, here are some ideas: face painting, drawing caricatures, and piņatas, pin the tail on the donkey, hiring a magician, themed events, and making your own sundae. Lots of pictures will be taken with family and friends to remember this festive day. Because you will want to do what the kids want why not make this pizza party, or even take the kids out for Chinese or Italian food. This party would not be complete without a celebratory cake for the guest of honor.
