A Kansas City Chief’s party can be enhanced with delicious cupcakes. Food is one of the most important party supplies that is needed at any football game party.
Ingredients
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 1/2 cups sugar
1 teaspoon salt
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
1 teaspoon cocoa powder
2 tablespoons red food coloring
2 large eggs, room temperature
1 teaspoon vanilla extract
1 teaspoon white distilled vinegar
Cream Cheese Frosting
2 sticks butter, softened
1 pound cream cheese, softened
4 cups sifted confectioners' sugar
1 teaspoon vanilla extract
Line cupcake pans with cupcake papers and preheat the oven to 350 degrees. The batch will yield 24 Kansas City Chiefs cupcakes.
Sift together, in a medium bowl: sugar, flour, baking soda, cocoa powder and salt. Beat together with a hand mixer in a large bowl: eggs, buttermilk, buttermilk, food coloring, vinegar, and vanilla. Add the sifted dry mixture to the wet mixture gradually until it is smoothed.
Fill the cupcake pans about 2/3 of the way full in each cupcake space. Bake 22 minutes with turning the cupcake pans only once at 11 minutes. When finished, allow to cool all the way before frosting them.
Cream Cheese Frosting Directions:
Beat the cream cheese, vanilla, and butter in a large bowl on slow speed until smooth. Then, increase the speed as necessary until the frosting is fluffy and light. Ice the cupcakes with a butter knife and top with garnishes such as nut or even strawberries.
For a Kansas City Chiefs theme touch, add in a team themed tooth pick with tem flag or even top with Kansas City Chief mini football helmets. Guests will love the red cupcakes and it will be the perfect dessert for Kansas City Chief fans!
