Hot, Hot Muffins
For a twist on your traditional muffins, try out these special spicy muffins for Mardi Gras. A good muffin is great to eat, but with a spicy mufffin on your plate the party will have just a little extra va-va-voom!
1/4 cup EACH finely chopped red, yellow & green bell pepper,
2 eggs
1/4 cup butter or margarine,
2 cups flour,
2 Tbsp sugar,
1 cup milk
1 Tbsp baking powder,
3/4 tsp salt,
1/2 tsp dried basil
Preheat oven to 400oF, prepare pans. In small skillet over medium-high heat, cook peppers in butter until colour is bright & pepper is tender crisp, about 3 mins. Set aside. In large bowl, combine flour, sugar, baking powder, salt & basil. In small bowl, combine milk & eggs until blended. Add dry mix together with peppers (plus butter) to wet mix. Stir until just moistened. Spoon into pans, bake for 15 mins or until golden. Makes 12 muffins. This muffins aren't too spicy. I suggest buttering them up when eating too.

It's the biggest Party in the world - Mardi gras! Re-creating this world famous event in your home is a great theme for any party. The colorful colors of Mardi gras, purple, green, and gold will decorate your party room for a memorable and festive occasion. Be sure to have beads everywhere, wear them or hang them but overdo it in this area and use them as party favors as well. When you send out your invitations be sure to let your guests know that it is a Mardi gras party and they should come in full Mardi Gras Costumes with feathered masks et al. You could give prizes for the best costume and also have guests try to guess who is under the masks. Another fun activity might be to have a fiesta Limbo, (hard to do in full costume while holding your mask on). Being able to taste the Cajun cuisines, hear the Zydeco or Jazz sounds will all be part of this rocking party. Appetizers could include any of the following: Shrimp or Crab Mold, Cheesy Shrimp Canapés, Sautéed Fresh Mushrooms and Merle's Spinach Balls. Here are some choices for the entrees: Crawfish Stew, Pie, Etouffee, or Fettuccine; Louisiana Stuffed Crabs, Oysters Rockefeller, Cajun Shrimp Creole, Bayou Shrimp Fettuccine and Jambalaya to name a few. Try serving some of these fun drinks: Hurricane, Sazerac. Mint juleps, Bloody Marys, Ramos Gin Fizz, and Pimms Cup. The perfect Mardi Gras Dessert would be Chocolate Doberge Cake or King Cake.
