Fried Spinach You may not be a big fan of fried greens, but this special Spinach recipe will change your mind on Martin Luther King Jr. Day. 2 lb fresh spinach or 3/4 lb frozen leaf spinach 1 tblsp oil 1 tsp salt 1 tblsp soy sauce Wash the spinach thoroughly and drain off excess water, or defrost the frozen spinach. Heat the oil in a large sauce pan, add the leaf spinach and fry over fierce heat for 1 minute, stirring all the time, until the spinach softens. Add the salt and soy sauce, mix well and cook gently for another minute. YUM! There's nothing like a big mess of greens for dinner. Make them better with some bacon fat dressing. |

Martin Luther King Jr.'s Birthday is the perfect theme for a fun Party or you could celebrate on January 20th which is Martin Luther King's Day. The invitations for this event could have a picture of Mr. King on them and you could say something like "I have a dream" and that is the theme for your party. Decorate with blown up pictures of Mr. King and have party favors with a copy of his famous speech. Some fun activities for this party could include a water balloon relay race, a water balloon toss contest, a speech contest involving facts about Mr. King, or a word contest where you make as many words as possible out of the letters in Martiin Luther King Jr. 3-4 letter words get 1 point, 5 letter words 2, 6-3, 7-5 and 8 or more letter words get 11 points. The food for this party should reflect the African American culture and could include some of the following: cornbread, southern snapper, fried chicken, grits, black-eyed peas and rice.
