Ingredients:

1 lb.- chicken breasts; boneless and skinless (butterflied)
1 cup - medium diced fully ripe tomatoes
1/2 cup - finely chopped and seeded fresh hot peppers
2 cup - Spanish onions;cut into thin strips, cooked until tender
1/2 cup - red bell pepper; cut into thin strips, cooked until tender
2 cup - green bell pepper; cut into thin strips, cooked until tender
1/4 cup - finely chopped fresh garlic
1/4 cup - chopped fresh cilantro
1/4 cup - fresh squeezed lime juice
1 tsp. - ground black pepper
1/4 cup - salad oil
2 tsp. - salt
1 tbsp. - granulated sugar
12 - flour tortillas
3 cup - shredded Monterey Jack cheese
Instructions:

In a bowl, combine the lime juice, garlic, salt, pepper, oil and sugar. After it is thoroughly combined, separate the mixture into two bowls. Toss the chicken in these bowls and fully coat them in the mixture. Leave to marinate at least 4 hours (up to three days).

Cook the chicken by either sautéing or by grill; cook thoroughly. Cut each chicken into thin strips to use immediately.

In a non-stick frying pan, over medium heat, place a tortilla in the bottom and sprinkle with slicked chicken, onions, cheese, peppers, hot peppers, tomatoes (to liking). Fold over the tortilla as the cheese begins to melt so that all the contents remain in the tortilla. Continue heating until both sides of the tortilla are lightly browned and serve.
