Hushpuppies are a great addition to a New Orleans Saints Theme Party because they can be prepared in many different ways. They incorporate the fried food southerner’s love and the ease of a finger food – a combination that is perfect for guests engaged in a football game!

Ingredients: (will yield about 25 hushpuppies)

½ cup – whole kernel corn
1 tsp. – cracked black pepper
¼ cup – chopped green onions
½ cup – finely diced Spanish onion
½ cup – all purpose flour
1 tsp. – sugar
3 tsp. – baking powder
1/8 tsp. – salt
1 quart – salad oil (used for frying)
1 – large egg
1 ¼ cup – yellow corn meal
2/3 cup – milk
Instructions:

In a bowl, mix together the milk and the egg.

In a larger bowl, combine all the dry ingredients along with the egg mixture, onions, scallions and corn until thoroughly blended together. Be sure there are no lumps in the mixture.

Note: If desired, add in ½ cup of sausage, bacon, pecans or other ingredients in this step.

Set the deep fryer at 375 degrees. If using a 3-quart sauce pan, it will take about 15 minutes over a medium high heat to heat the oil. Check the oil by dropping a small bit of batter in the oil. If it sizzles on contact, then it is ready to use.

Add about 5 or 6 hushpuppies to each batch, cooking them until they are golden brown. They should be firm and not runny in the center.

Pull the hushpuppies out of the oil and onto absorbent paper to soak up excess oil and then serve.
