Using the chocolate cupcake recipe below, decorate each cupcake half and half with red and white icing or even use white icing and spray tint it. Party hosts can also use small helmets with NY written on them or even pipe out NY in icing on the top of the cupcake.
Chocolate Cupcakes:
1 tsp vanilla extract
2/3 cup mini chocolate chips (optional)
1 1/2 cups all purpose flour
1 1/2 cups white sugar
2 large eggs
1/3 cup vegetable oil or melted butter
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup unsweetened cocoa
1 1/2 teaspoons baking soda
3/4 cup water
3/4 cup buttermilk
3/4 cup unsweetened cocoa
1 1/2 teaspoons baking soda
Instructions:
1. Preheat oven to 350F and place paper or foil cupcake liners in (2) 12 cup muffin pans.
2. Whisk cocoa, white sugar, flour, baking powder, baking soda and salt until thoroughly mixed, in a large bowl.
3. Whisk together buttermilk, eggs, vanilla extract, vegetable oil and water into a medium bowl and then Whisk into flour mixture until there are no flour streaks present. If using mini chocolate chips, add them now.
4. Fill muffin cups about 2/3 of the way full, evenly.
5. Bake at 350F for 15 minutes, pull out and let cool before frosting.
To cater to everyone, be sure to make a batch of vanilla cupcakes or yellow cupcakes so those who do not like chocolate can still enjoy a tasty treat during the New York Giants football game.
