Potato Salad
That patriotic party celebration is always great when held outside with some tasty BBQ. However, no man can live on BBQ alone, so add this tangy Potato Salad to the mix for a great and complete meal.
1 lb. fat back or bacon 2 tsp celey seed
1 cup chopped onion 1/2 cup chopped celery
4 Tbsp. flour 1 cup vinegar
4 Tbsp. sugar 1 cup water
3 tsp. salt 12 cups cooked potatoes, chopped
pepper parsley
Cook bacon til crisp; drain (reserving 1/2 cup fat), and crumble.
Cook onion and celery in fat til just tender. Blend in flour, sugar, salt, celery seed, and pepper to taste.
Add vinegar and water. Cook and stir til thickened and bubbly.
Add bacon and potatoes; heat thoroughly, tossing lightly so as not to break up the potato slices. Grnish with parsley.
Can be served warm or chilled, but you taste the bacon fat a bit more when it's chilled.
Boy, oh boy is this potato salad good.

Want to have a Patriotic Party. Think everything American and Red, White and Blue. Your invitations could have the American Flag on them, Uncle Sam, or Lady Liberty. Decorate the party house with lots of streamers, flags and balloons in red, white and blue. It could be a costume party where guests come dressed in early American or as Uncle Sam or Lady Liberty. Have everything matching with your patriotic theme such as napkins, cups, table covers, and centerpieces. If this is a 4th of July party, you could have fireworks in the yard. A barbeque would make a fun food fest. Hamburgers, hot dogs, ribs and chicken and all the side dishes such as Cole slaw, salads, and veggie and fruit platters. Games for this party are as varied as the theme but could include, water balloon fights, relay races for outside but if you stuck indoors, trivia questions about America would be a good place to start. End this fun party with cup cakes topped with red, white and blue icing and the same colored sprinkles.
