Start off with a simple white icing recipe:
Ingredients:
3 cups powdered sugar
1 teaspoon vanilla extract
1/2 cup unsalted butter, softened
2 to 3 Tbsp. milk
Directions:
With an electric mixer, beat butter on high until it is creamy. Slowly beat in the sugar until it becomes smooth. Next, beat in the vanilla and 2 Tbsp. of milk. Add some additional milk if necessary until the preferred consistency is met.
In order to color with icing, use food coloring. The food coloring colors needed are green and blue. Some people will like to play around with the different variations of the midnight green color, however, start with the basic 8 drops of green and 3 drops of blue. If the color is too dark and a lighter green is preferred, simply add in yellow food coloring to lighten it up.
Keeping the green color dark and then piping around the edges with a white or silver colored icing creates a great contrast of color and adds a dramatic look to the Philadelphia Eagles NFL cupcakes. Be sure to make a couple of batches so that everyone gets at least one. Guests love them so expect no leftovers!
