Philadelphia Eagles fans will love this unique twist on a pizza. Give guests the best at a Philadelphia Eagles Theme Party by creating this delicious balsamic caramelized onion, bacon and three cheese pizza.

Makes: one pizza

Ingredients:

Onion Topping

1/2 lb. - Vidalia onions thinly sliced across the ribs
1/4 cup - olive oil
1/2 cup - balsamic vinegar
1 each - peeled, cored and sliced Granny Smith Apple
1 Tbsp. - stripped and chopped fresh rosemary

Pancetta Bacon

1/2 lb. - pancetta bacon; cut into small diced pieces

Pizza

1 each - frozen bread dough loaf, thawed in the refrigerator for 24 hours
2 Tbsp. - olive oil
as needed - non-stick spray
1/4 lb. - crumbled Stilton cheese
1/4 lb. - shredded Toscanello cheese
1/2 cup - shredded block Parmesan cheese
as needed - fresh ground black pepper
2 Tbsp. - finely chopped fresh chives

Instructions:

Creating the Onion Topping

Sauté the Vidalia onions over high heat until they are browned and then add vinegar while cooking until all the liquid has evaporated out. Add in the rosemary and the apples and toss until the apples begin to slightly soften. Stick in the refrigerator to chill.

Pancetta Bacon Instructions

Turn a sauté pan over high heat and cook the pancetta bacon until the color is a deep golden brown. Place the bacon on an absorbent paper and let it cool.

Pizza Instructions:

Roll and stretch out the bread dough on a baking sheet that is sprayed with non-stick spray and drizzled with olive oil. Top the dough with onion apple mix, the bacon, the three cheeses, chives and fresh ground pepper.

Pre-heat oven to 400 degrees and cook for about 25 minutes. Cheese will be golden on top and the crust is browned and crisp on the bottom.
