Pirates of the Caribbean Theme Party then with a baked fish dish? After all, pirates can't live by gold coins alone, and what pirate worth his salty salt wouldn't enjoy a delicious fish dish? Mediterranean baked fish will shiver guests’ timbers!
Directions:
2 tsp
olive oil
1 Large sliced onion
1 can (16 oz) whole tomatoes, drained (reserve juice) and chopped coarsely
1 bay leaf
1 clove garlic, minced
1 C dry white wine
1/2 C reserved tomato juice from canned tomatoes
1/4 C lemon juice
1/4 C orange juice
1 Tbsp fresh grated orange peel
1 tsp Crushed fennel seeds
1/2 tsp Crushed dried oregano
1/2 tsp Crushed dried thyme
1/2 tsp Crushed dried basil
to taste black pepper
1 lb fish fillets (sole, sea perch, or flounder)
How to Prepare:
Heat oil in a sizable nonstick skillet. Add the onion, and saute over moderate heat until soft.
Add all the remaining ingredients save the fish.
Stir well and simmer uncovered for 30 minutes.
Arrange the fish in a 10x6-inch baking dish, then cover with the sauce.
Bake, uncovered, at 375º F for approximately 15 minutes or until the fish flakes easily.
