Ingredients
½ cup of butter
2 eggs
1 ½ cups sugar
1 cup buttermilk
1 ounce red food coloring
1 teaspoon vanilla
1 tablespoon vinegar
2 1/3 cups flour
1 teaspoon baking soda
1 teaspoon salt
½ cup unsweetened cocoa.
Directions: To make Betty Boop cupcakes use the following directions.
Preheat the oven to 350° for about twenty minutes. Then put decorative cupcake liners in the cupcake pans and prepare the pan for baking. In a large mixing bowl combine the sugar and butter and beat until very fluffy. Then add buttermilk, food coloring, vanilla and eggs then mix thoroughly until smooth. Add the rest of the ingredients (baking soda, flour, vinegar, cocoa and salt) and mix with an electric mixer until smooth. Pour the batter into the cupcake pans filling about 2/3 of the way and then bake for 20 to 25 minutes. When the cupcakes have cooled frost them with butter cream frosting and then add Princess and the Frog cake toppers or cupcake sticks. This simple recipe makes very dainty and tasty cupcakes perfect for your princess birthday party.
