San Diego Chargers Theme Party look no further than this recipe for Pesto Chicken Spirals. This easy to follow recipe will yield about eight portions, so be sure to double the recipe as necessary to be sure all guests are accounted for.
Ingredients:
8 – 8 oz. boneless, skinless chicken breasts
2 Tbsp.- butter or margarine
2 Tbsp.- Grey Poupon mustard
4 Tbsp.- Grey Poupon mustard
1 tsp.- fine chopped garlic
1/2 cup - plain bread crumbs
1 cup - plain bread crumbs
1 each egg, large
1 - large egg
2 Tbsp.- grated Parmesan cheese
2 cups - chopped fresh parseley
2 tsp.- dried basil leaves
Instructions:
1. Pound the chicken breasts to ¼ inches thick.
2. Blend together 4 tbsp. mustard, 2 cups parsley, 2 tbsp. parmesan cheese, 2 tsp. basil, 1 egg, 1 tsp. garlic and ½ cup breadcrumbs. Then, spread the mixture over the chicken evenly and starting with the short end, roll up each chicken breast.
3. 6 inches from the heat source, broil chicken roughly 10-15 minutes. Turn the chicken after 8 minutes and brush with butter.
4. Add to skewers – mix together 2 tbsp. of the mustard and 1 large egg. Dip the chicken into the egg mixture first and then into 1 cup of plain breadcrumbs. Crosswise, cut each roll of chicken into four even pieces. Finally, pierce the chicken onto 8 skewers and stick back under the broiler for about 5 minutes.
