Vegetarian Chocolate Cookies
While a lot of people were exploring new ways of living in the sixties, not many of those 'new ways' really remained popular through the years. However, the vegetarian diet certainly did become a staple of many millions of peoples lives. Encourage your guests to take up the cloak of good eating and good living with these tasty Vegetarian Chocolate Cookies.
1/2 lb (2 sticks) butter or margarine
1 3/4 cups sucanat
2 eggs (or equivalent replacer) <--e.g. Ener-G egg replacer
1 tsp vanilla extract
2 1/4 cups whole wheat pastry flour (organic if available)
1 tsp baking soda
1/2 tsp salt (optional)
1 bag (1 1/2 cups) Barat choclate chips
1) Preheat oven to 325 F for Giant cookies, 350 F for regular cookies.
Grease a cookie sheet.
2) Cream margarine and sucanat together until light and fluffy. Add
eggs and vanilla and mix well.
3) sift dry ingredients together and stir in, mixing throughly. Add
chocolate chips to batter.
4) Bake on the prepared cookie sheet on the middle rack for 15-17
minutes for Giant cookies, 8-10 minutes for regular cookies. Remove
from oven while cookies are slightly soft. Cool on the baking sheet for
5 minutes before transferring cookies to a rack to cool completely.
Well, it's not real chocolate, but it is a reasonably good facimile. I like these cookies as gooey as possible so I don't cook them the full amount of time.

Having a Sixties Party will be a blast. This would be perfect party for someone turning 60 or just people who remember what a fun time this was. Whether you decide upon a "beach theme" or "Rock and Roll" starts with incorporating this theme into your invitations and then your decorations. Use bright psychedelic colors, tie dye everything, peace signs and all the hippie paraphernalia and don't forget "flower power." Have guests come in their best 60's outfit and then have a costume contest. Play 60's music and have a "Jive Contest" too with prizes for the best couple. You could also have a "Name that Tune" contest. Don't forget the strobe lights, the black lights and the lava lamps for a total 60's atmosphere. For the refreshment end of things, the 60's food was Fondue and Kool-aid, electric! You could do punch bowls and add a little spirits if the crowd is adult. A buffet table with sandwiches and cold cuts would be excellent and end the party with fabulous desserts including a 60's cake with Elvis on it.
