Treat guests at a St Louis Rams Theme Party to a scrumptious strawberry cheesecake! Most all football fans love to have handy munchies during the game but what about after it? Having a dessert on hand after a Rams football game could be just what they are looking for.

Ingredients:

Crust:

1 ½ cup – graham cracker crumbs
2/3 cup – melted butter (or margarine)
2 tbsp. – granulated sugar
Filling:

1 cup – granulated sugar
¼ tsp. – vanilla
1 ¼ lb. – softened cream cheese
2 tsp. – freshly grated lemon peel
3 – eggs
Glaze:

1 cup – granulated sugar
3 tbsp. – cornstarch
1 cup – mashed strawberries
1/3 cup - water

Crust Instructions:

Preheat the oven to 350 degrees. Stir the sugar and graham cracker crumbs together in a bowl. Next, thoroughly mix in the butter and then press the mixture firmly in a spring form pan. Bake the crust for roughly 10 minutes and then allow it to cool.

Filling Instructions: Reduce the heat of the oven to 300 degree. In a large mixing bowl, beat the cream cheese. Add in the sugar slowly, beating the mixture until it is fluffy. Add in the lemon peel, vanilla and eggs (one at a time).

Pour the mixture onto the graham cracker crust slowly. Bake for about an hour or until the center is firm. Let the cheesecake cool and then put it in the refrigerator to chill for 3 hours.

Glaze Instructions:

In a small saucepan, blend together the cornstarch and sugar. Then stir in the mashed strawberries and water. While consistently stirring, cook until the mixture boils and thickens. When boiling, cook for 2 minutes and then let it cool before spreading the glaze over the cheesecake.
