The sporting season brings with it energetic tailgate parties and that means loads of tailgate cupcakes. Tailgate parties are the one of the most loved traditions of the sporting world, or the sporting fans to be precise. The nature of the parties varies from sport to sport. Baseball tailgate parties have their own excitement and football tailgate parties have their warrior spirit.
Tailgate cupcakes are a must for any tailgate party regardless of the sport. Cupcakes are easier to store and serve and to not require a lot of effort in setting up. But of course no one likes plain simple cupcakes. There should be something about the cupcake that jumps out and mixes with the theme. Colors and artwork are the two medium for this expressiveness.
However, the recipe is important also. Here is a marvelous recipe for delicious cupcakes that are top-notch quality every time:
3 cups all-purpose flour
2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
6 large eggs
2 cups softened, not melted, butter
1/2 cup 2% milk
2 teaspoon vanilla
First combine all the dry ingredients and mix them till they are uniform. Then add the butter, vanilla and milk. Use an electric beater and mix at high speed for 5mins. Use a spatula to help you do the mixing properly.
Switch the beater to low speed and add the eggs, one at a time. Allow 30 seconds of mixing time between each addition. When all the eggs are added, speed up the beater and mix until the batter is fluffy.
Bake for 20mins at 350 degrees.
Once the cupcakes are cool, wrap them in a plastic food wrap to preserve the freshness. Get colored icing and cupcake picks from a party supplies shop. Just before the tailgate party, set up the tray and apply the icing and insert the cupcake picks. Always add the icing just before serving as it doesnt get spoiled that way.
